We are particularly proud of this recipe — children adore chicken nuggets but they usually feature reconstituted meat and fried, artificially coloured coatings. Our version uses lean chicken goujons dipped in gluten-free, fat-free polenta batter that is then baked, not fried. Read the rest of this entry »

Fiona tested this recipe on her parents, who, quite sensibly, think normal fish fingers are revolting, and even they thought these home-made ones were absolutely delicious! Read the rest of this entry »

Bring out chopsticks one day; blindfold them for a ‘guess what’s for supper’ food-tasting test another time; make them eat the different foods on their plate in alphabetical order — there are all kinds of games you can play to encourage your child to eat and to deflect attention from battles over whether they like a food or not. List, with as much detail as you can, how it benefits you to be in control of your addictive eating and what it costs you to be out of control. Put the emphasis on health and wellbeing, rather than appearance. Keep the list somewhere safe, private and easily accessible, like a Filofax, diary or jewellery box. Refer to it often, adding to it as you go along. These are notes to yourself in the future, if you forget. Read the rest of this entry »

Let me give you the bad news first: like red meat, chicken contains significant amounts of fat. The chicken skin is almost entirely composed of fat, and there is also fat hidden inside the flesh of the wing, the drumstick, the thigh and the neck. The only part of the chicken that is acceptable on the X Diet is the breast.
This may come as a surprise to ‘career dieters’, but even without its skin, a deboned chicken breast contains two teaspoons of fat. Read the rest of this entry »

Fat is hidden everywhere. Consider a steak and kidney pie. Everyone knows that pies are not exactly ‘health foods’, but have you ever thought about just how much fat this fast food contains? The pastry is almost half fat — look at your greasy fingers when you’re finished eating! Now delve inside the pie. What do you think they used to fry the onions? Oil. What did they use for the filling? The fattest beef and kidneys they could find — not lean fillet steak. And why does the sauce taste so good? Because it’s so fatty! Read the rest of this entry »

`How do I fry without fat?’ is one of the most common questions my patients ask me. Let me introduce you to the concept or dry-frying, which is used in many of the recipes. Dry-frying is a method of sautéing -rood without using oil or butter. There is no difference in the flavour or the final dish, although the preparation takes a little longer.
Hoff fill a teacup with boiling water and add a teaspoon of’ stock powder. Stir until dissolved, then fill the cup to the top with red or white wine – any cheap plonk will do! CIF you don’t drink alcohol, use apple juice instead.) Read the rest of this entry »

To save me having to make endless lists of other foods that contain fats, I’m going to show you how to become a ‘fat sleuth’ — in other words, to empower yourself as a consumer so that you are easily able to detect hidden fat. And how do you do this? By reading the label of everything — and I mean everything — you buy. Here are some important steps:
Recently, it’s become law that manufacturers of food products have to list ingredients on the label. These should be listed in descending order from the largest ingredient to the smallest (although, at present, only some manufacturers and two large supermarket chains fully comply with this requirement). The ‘detoxifying’ diets and fasts so popular these days can actually harm your metabolism. Let me introduce you now to a food that truly earns its status as the ultimate `detoxifies’ — water!
Very few of us drink enough water. ‘I never get thirsty,’ some of my patients tell me. ‘I just don’t seem to need very much water.’ This is nothing to be proud of. Not drinking enough is a bad habit that many people drift into — and it’s exactly that, a habit. Read the rest of this entry »

Consider your average working person: let us call her Samantha. She is in a rush to get to an early meeting, so she doesn’t have breakfast. She drives through the smog of the early rush-hour traffic, fretting about being late. When she’s finished the meeting, she rushes out to lunch. She orders a toasted sandwich with smoked salmon, and finishes off with filter coffee that has been brewing on the stove for many hours. She eats her meal sitting in the sun. Then it’s back to the office for more coffee as she frantically races against a deadline. Read the rest of this entry »

The lymphatic system plays an integral part in detoxification. It transports lymph, a clear, colorless fluid that bathes and purifies all of the cells of your body. The lymphatic system runs parallel to the circulatory system and is composed of a network of porous lymphatic vessels that are similar to arteries, as well as hundreds of lymph nodes that are scattered throughout the body. Lymph passes into and out of the bloodstream through permeable membranes, bringing nutrients to the cells and carrying away waste products. Read the rest of this entry »

Whole grains and beans are rich sources of fiber, providing bulk that helps to naturally cleanse the intestinal tract. Fiber is an essential component of a cleansing and detoxification program. Pesticides, toxic metals, estrogen and other hormones, and a variety of other toxins are all swept out of the body by fiber. Through speeding up the movement of wastes through the intestines, fiber helps to detoxify the body. The longer that wastes remain in the body, the more opportunity toxins have for being reabsorbed into the bloodstream through the porous walls of the intestines. There are basically two types of fiber: insoluble, and soluble. Read the rest of this entry »
