For convalescents, soups are a favourite food. They are quick to prepare, packed with nutrients and help to rehydrate the body. Include soup on your day-after menu.
Chicken soup is the traditional sickroom standby. This is probably because chicken has a mild antibiotic action in the body, as well as being packed with vitamins and minerals. It is also one of the easiest meats to digest and will boost energy levels.
hangover chicken soup
This hearty, appetizing soup contains barley, which consists of plenty of B-complex vitamins, potassium and other minerals. It also has a soothing action on the stomach, intestines and urinary tract.
- 1 large onion
- 15m1/1 tbsp olive oil 1 large carrot
- 4 sticks celery
- 1 litre/13/4 pints/4 cups chicken stock
- 1 bay leaf
- ground black pepper 25m1/114 tbsp pot barley
- 2-3 handfuls bite-sized, cooked chicken pieces, without the skin
Chop the onion and soften in the olive oil over a low heat, without letting the onion brown. Wash the rest of the vegetables and chop them into small pieces. Add them to the onion, cover and leave all the vegetables to soften for 5-10 minutes. Check the pan every now and again and give it a stir to make sure the vegetables are not sticking. Pour in the stock and add the bay leaf and enough ground black pepper to taste. Wash the barley and add to the pot, together with the chicken pieces. Bring to the boil, lower the heat and simmer for 1 hour. Check the seasoning and serve with wholemeal bread.
